Fish Taco's with Pineapple Salsa - a Jane Grover recipe

I love finding a good cookbook.  

I love cooking and baking but I do generally need to follow a recipe even if it is the same recipe I have been following for over 10 years!  So when I find a cookbook that has so many of our favourite family meals, all in the one place and with fun and welcome tweaks, I get so excited!  And I have got to say, Jane Grovers latest cookbook "Our Delicious Adventure - Recipes and Stories of Food and Travel" totally hits the spot.  When I initially flicked through it I was so surprised to see so many meals that our family also enjoy.  So I wasn't surprised to read that this is exactly what Jane Grover was trying to do - "my desire has been to translate the food, the experiences and the inspiration we found on our travels into simple, healthy recipes you can cook at home." JG

I have slightly adapted Jane's recipe (sorry Jane) simply for space on the recipe sheet and to give the option of using pre-made mayonnaise.  However I do encourage you to look at Jane's Book for the full recipe as she is more specific in cooking directions as well as preparing a homemade mayonnaise.  Not to mention the other amazing recipes in there.

Fish Taco’s with Pineapple Salsa

Adapted from “Our Delicious Adventure” by Jane Grover

Prep Time: 10 min     Total Cook Time: 25 min      Serves: 4-6

* Items from pantry or to be purchased separately


  • 600g white fish (such as flathead)*
  • ½ tsp Sweet Paprika
  • ½ tsp salt*
  • ¼ red or green cabbage, finely shredded
  • 6 wraps, cut in half to get 12 serves


  • 300g peeled, cored and diced pineapple
  • ½ red onion, finely sliced
  • ½ cup coriander, finely chopped
  • juice of 1 lime


  • ½ - ¾ cup mayonnaise
  • juice of 1 lime
  • ½ tsp Sweet Paprika


  1. Combine all salsa ingredients in large bowl. Mix well and set aside.
  2. Combine all mayonnaise ingredients in small bowl, mix well and set aside.
  3. Season fish with Sweet Paprika & salt. Heat large frying pan or BBQ on high. Place fish on pan, well spaced and cook for 2 minutes each side. Transfer to plate and rest for 2-3 minutes.
  4. Toast wraps either over a gas stove, on a hot pan or sandwich press. Toast for 1 minute each side.
  5. Place tortillas, fish fillets, mayonnaise, cabbage & salsa in centre of table and let each person assemble their taco as desired.
